This is a side for your sliders. I love sides; I could have a whole meal of sides. I have meat-eating mates who apologise to me when we go to restaurants because I can ‘only’ have the sides from the menu. Typically meat-centric way of thinking. I’m happy with sides. Really, tapas are sides; small plates are sides. Long live sides.

Ingredients

Quantity Ingredient
1 litre vegetable oil, for deep-frying
160g tempura flour
160ml sparkling water, cold
150g cornflakes
1 tablespoon sweet smoked paprika
1 tablespoon sea salt
1 large onion, sliced into 5 mm thick rings
Vegan mayonnaise, using chipotle variation, to serve
or ketchup, to serve

Method

  1. Heat the oil in your deep-fat fryer to 190°C. In a bowl, combine the flour and sparkling water without over-stirring; the odd lump is fine. Crush the cornflakes so that they resemble large breadcrumbs, then mix with the paprika and salt. Dip each onion ring into the batter mixture, then into the cornflakes. Deep-fry in batches until golden and crispy.
  2. Dip into chipotle vegan mayonnaise or ketchup and serve.
