Ingredients

Quantity Ingredient
100g sunflower seeds
50g pumpkin seeds
100g stale bread, made into breadcrumbs
1 garlic clove, peeled
225g smoked tofu, drained
100g firm tofu
1 tablespoon vegetable stock powder
1 tablespoon soy sauce
1/2 teaspoon thyme leaves
1/2 teaspoon white pepper
oil, for frying
sea salt

To assemble, for each patty:

1 burger bun
1 scoop Vegan mayonnaise
1 large lettuce leaf (cos or romaine)
1 large slice tomato
1 vegan cheese slice
2 slices sweet pickled cucumber
ketchup

Method

  1. Preheat the oven to 180°C.
  2. Put the seeds, breadcrumbs and garlic into the bowl of a food processor fitted with an S-blade and process until the mixture is coarsely ground but still retains some texture (it’s okay to see a few whole sunflower seeds in there).
  3. Add the remaining ingredients except the oil, and process until the mixture comes together. Don’t process for too long; you want to keep some texture from the seeds. Form into 12 sliders or 6 large burgers (this is easier if your hands are wet).
  4. Heat a little oil in a frying pan, add the sliders and fry on both sides until golden. Warm the buns in the meantime.
  5. Split the buns, add the ‘vegannaise’, then the lettuce leaf, tomato slice, patty, cheese slice, the pickle and some ketchup. Top with the other bun half and serve.
