Sesame seeds are wonderful little seeds which contain high levels of calcium. They also hold an impressive amount of magnesium which together with vitamin D is essential for calcium absorption. Magnesium also stimulates our calitonin production. Calitonin is a hormone that makes calcium stay in the bones thus keeping it from being absorbed into the soft tissues. Calcium and magnesium have a very calming effect on the body and can be effectively used as a treatment for insomnia or anxiety.

There is a major difference between the calcium content of hulled versus unhulled sesame seeds. When using unhulled seeds, 1 tablespoon of sesame seeds will contains about 88mg of calcium. When the hulls are removed, this same tablespoon will contain about 5-10mg (about 90-95% less).

Ingredients

Quantity Ingredient
160g black unhulled sesame seeds
1 teaspoon lemon, juiced
700ml filtered water, plus extra for soaking
3 medjool dates
1 teaspoon ground cardamom

Method

  1. Place the sesame seeds in a medium bowl, add the lemon juice and cover with enough filtered water to come 1cm above the seeds. Soak for 8 hours or overnight, then rinse thoroughly and drain.
  2. Place the soaked and drained sesame seeds, the measured water, dates and cardamom in a high-speed blender and blend for 2–3 minutes.
  3. If you would like your sesame milk to be silky smooth and pulp free, pour the sesame milk through a nut milk bag or muslin (cheesecloth) and remove the pulp. If so, add the dates and cardamom after you have strained the milk and re-blend.
