What about this pie?! Take a brownie (yes, please) and a pastry pie crust (yes, please) and marry them. When Phoebe cooked these little pies for the book shoot, I got excited. Very excited. They have a brownie texture with crisp pastry crunch and a salty punch from the peanut butter, all in a convenient single-serve handpie, which caused a bit of an issue for me as I ate one, and then ate another one – apparently the single serve didn’t apply to me. — Kirsten

Ingredients

2 x 300g frozen careme chocolate pastry, thawed, or other bought chocolate shortcrust rolled to a thickness of 3 mm
80g unsalted butter
200g dark chocolate, chopped
1 tablespoon good-quality cocoa powder
2 tablespoons sunflower oil
150g soft brown sugar
1 teaspoon natural vanilla extract
2 eggs
2 egg yolks
140g crunchy peanut butter
100g plain flour
1/4 teaspoon fine sea salt
1 tablespoon crushed peanuts, to scatter
pinch salt flakes, to scatter

Method

  1. Preheat the oven to 180°C. Line six 10 cm × 2 cm deep oval pie dishes with pastry, trimming away any excess pastry. Line the pastry cases with baking paper and fill with baking beads (or uncooked rice or dried beans). Blind bake for 10 minutes or until slightly dry. Remove the baking paper and baking beads. Reduce the oven temperature to 160°C.
  2. Put the butter, 150 g of the chocolate and the cocoa powder in a saucepan over low heat, stirring until the chocolate has melted, then remove from the heat.
  3. Whisk together the sunflower oil, sugar, vanilla, eggs and egg yolks, and the peanut butter until smooth. Mix in the flour and salt, then stir in the chocolate mixture and remaining chopped chocolate. Divide between the pie dishes and bake for 20 minutes or until cooked through but still fudgy in the centre. Cool to room temperature before scattering with the crushed peanuts and salt flakes and serving.
