Basic tomato sauce

I don’t think anything can beat a plate of fresh pasta with a simple tomato sauce. It’s one of the best comfort meals ever, and is a regular Sunday night dinner in my family. Serve with fresh basil leaves – perfection!

Ingredients

Quantity Ingredient
2 tablespoons extra-virgin olive oil
1 onion, finely diced
1 garlic clove, finely chopped
sea salt flakes
800g tinned chopped tomatoes
50g basil, leaves picked
1 teaspoon sugar

Method

  1. Heat the olive oil in a saucepan over a medium heat and fry the onions and garlic until lightly caramelised, about 3–5 minutes. Season with sea salt and freshly ground black pepper.
  2. Add the tomatoes and basil, and season again, this time with sugar and sea salt.
  3. Place a lid on the saucepan, and simmer away for 20–25 minutes.
  4. Taste and stir every 10 minutes, adding extra seasoning if needed.
