Polenta is one of my favourite ingredients, and can be used in lots of different ways. You can have a wet soft polenta as in this recipe, but you can also use it to make cakes, delicious polenta chips or wafers, just to name a few. Soft polenta is such a hearty accompaniment for osso bucco, casserole or caponata. It’s a perfect winter warmer!

Ingredients

Quantity Ingredient
300g polenta
1.5 litres water, boiling
sea salt
50g salted butter, chopped
125ml milk

Method

  1. Pour 500 ml of cold water into a large saucepan and add the polenta. Whisk until smooth, then pour in the boiling water. Continue to whisk over a medium heat until the water and polenta has combined, and starts to bubble.
  2. Lower the heat to a simmer, season with sea salt, and cook for approximately 30 minutes, stirring occasionally with a wooden spoon. Add the butter and milk, and stir until the butter has melted and the mixture has combined.
  3. Pour the polenta into a serving dish.
