Amaretti biscuits are an all-time favourite of mine. I’ve grown up eating them every time I went to both my nonnas' houses. They go perfectly with a coffee either in the morning or straight after lunch.

Ingredients

Quantity Ingredient
4 egg whites
340g caster sugar
340g almond meal
1 tablespoon amaretto liqueur
20 blanched almonds, to top

Method

  1. Preheat the oven to 190°C.
  2. In a large bowl, beat the egg whites using an electric mixer until firm peaks form, about 2–3 minutes. Then slowly add the sugar and beat until all the sugar has dissolved.
  3. Gently fold in the almond meal and amaretto liqueur.
  4. Line two baking trays with baking paper.
  5. Place the mixture into a piping bag and pipe the mixture into discs, about 2–3 cm in diameter. Press a blanched almond into the middle of each biscuit.
  6. Bake in the oven for approximately 15 minutes until golden brown. Remove from the oven and cool on a wire rack.
