Fennel and orange really is a winning combination, and this delicious side dish is a quick and easy accompaniment for a perfect roast! Heirloom carrots are such beautiful ingredients to use. I think more than anything I love their vibrant colours!

Ingredients

Quantity Ingredient
8-10 heirloom carrots, trimmed
80ml extra-virgin olive oil
2 oranges, juiced
1 tablespoon honey
2 tablespoons fennel seeds
sea salt flakes

Method

  1. Preheat the oven to 200°C.
  2. Cut the carrots in half lengthways.
  3. Put the carrots in a bowl with the olive oil, orange juice, honey and fennel seeds, and season with sea salt and freshly ground black pepper. Toss to combine.
  4. Place on a baking tray lined with baking paper and put in the oven for 30 minutes, until the carrots are tender.
  5. Serve in a large bowl.
