This is such a classic Sicilian dish, with its pine nuts, capers, anchovies and currants. I have enjoyed this dish from a young age, always with a fresh and crunchy fennel and orange salad alongside it.

Ingredients

Quantity Ingredient
4 x 150g garfish fillets
sea salt flakes
1-2 tablespoons extra-virgin olive oil

Stuffing

Quantity Ingredient
3 tablespoons extra-virgin olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
40g pine nuts
3 tablespoons capers, rinsed and squeezed dry
2 tablespoons currants, chopped
2 anchovy fillets, finely chopped
25g fresh breadcrumbs
1 large handful flat-leaf parsley, finely chopped

Fennel and orange salad

Quantity Ingredient
1 bulb fennel, trimmed and thinly sliced
1 orange, peeled and cut into segments, membrane removed
2 teaspoons white-wine vinegar
1 tablespoon extra-virgin olive oil

Method

  1. Preheat the oven to 220°C.
  2. To make the stuffing, heat the olive oil in a frying pan over a medium heat. Add the onion and garlic, and sauté until translucent, about 3 minutes. Add the pine nuts, capers, currants and anchovies and cook until the currants have softened, about 3 minutes. Season with sea salt and freshly ground black pepper. Add the breadcrumbs and parsley and stir to combine. Remove from the heat and set aside.
  3. Lay the garfish fillets flat on a chopping board, skin side down. Season with sea salt and freshly ground black pepper and cover each with approximately 2 tablespoons of stuffing. Roll the fillets and secure with a toothpick.
  4. Pour 1–2 tablespoons of olive oil in a frying pan and set over a medium heat. Add the rolled fillets and cook until the skin is sealed, about 2 minutes. Transfer the fillets to the oven until cooked through, about 7–8 minutes. Remove from the oven and set aside.
  5. Meanwhile, to make the salad, toss the fennel, orange, vinegar and olive oil in a bowl until combined. Season to taste.
  6. Serve the garfish fillets with salad on the side.
