This is the classic almond filling used for pastries and tarts. For optimum flavour, grind your own almonds in a food processor (with a little sugar to help break them down), but be careful not to over-grind the nuts or they will become greasy.

Ingredients

Quantity Ingredient
100g butter
100g caster sugar
1 egg, at room temperature
1 extra yolk, at room temperature
100g ground almonds
2 tablespoons plain flour

Method

  1. Cream the butter and sugar together in a bowl until well combined.
  2. Beat the egg and yolk together, then gradually add to the creamed mixture, beating well between additions. Finally, stir in the ground almonds and flour until well combined.
