Stir-fried beef with green peppercorns

Ingredients

Quantity Ingredient
3 garlic cloves
2 red chillies
1 shallot
450g beef sirloin, fillet or rump
2 tablespoons sunflower oil
1/2 tablespoon nam pla, (fish sauce)
1/2 tablespoon dark soy sauce
1/2 tablespoon palm sugar
1/2 tablespoon kecap manis, (sweet soy sauce)
1/2 tablespoon fresh green peppercorns, or bottled and drained
handful coriander leaves

Method

  1. Peel and finely slice the garlic. Halve, deseed and finely slice the chillies. Halve, peel and finely slice the shallot. Trim the beef of any fat and sinew and slice very thinly across the grain.
  2. Heat the oil in a wok or large frying pan over a medium to high heat. Add the garlic, chillies and shallot and stir-fry quickly, then add the beef slices and cook for 2 minutes.
  3. Add the nam pla, soy sauce, sugar, kecap manis and green peppercorns and heat through.
  4. Remove from the heat, add the coriander leaves and pile onto a serving dish. Serve with rice and steamed greens.
