Fine green beans with almonds

Ingredients

Quantity Ingredient
250g fine green beans
10g butter
15g flaked almonds
salt
freshly ground black pepper

Method

  1. Top the green beans. Bring a large pan of salted water to the boil, add the beans and cook for about 4 minutes, or until they are nearly tender and starting to lose their ‘squeakiness’.
  2. Meanwhile, melt the butter in a frying pan and when it foams, stir in the flaked almonds. Cook until the almonds start to lightly brown, then, to ensure they colour evenly, remove from the heat and stir continuously as they finish browning.
  3. Drain the green beans and stir into the buttery almonds. Season well with salt and pepper.

Note

  • You can use finely sliced runner beans instead of green beans for this recipe and the variations below.

Variations

  • Fine green beans with tarragon and garlic: Omit the almonds and cook a crushed ½ garlic clove in the butter until lightly golden. Stir 2 tablespoons roughly chopped tarragon in with the beans.

    Fine green beans with hazelnuts and lemon: Use roughly chopped skinned hazelnuts in place of the almonds, and add ½ teaspoon finely grated lemon zest at the end, with a squeeze of lemon juice to taste.
