Ingredients

Quantity Ingredient
1 spring onion
1 garlic clove
1 green chilli
small bunch coriander
1/2 lime, plus extra to taste (optional)
2 ripe avocados
salt
freshly ground black pepper

Method

  1. Finely slice the spring onion, including plenty of the green part. Peel and crush the garlic, finely chop the chilli and chop enough coriander leaves to give you 2 tablespoons. Juice the ½ lime.
  2. Halve the avocados and remove the stones. Mash the flesh in the skin with a fork, which ensures you get all the best green coloured flesh away from the skin. Scoop the avocado flesh into a bowl and stir in the lime juice, which will stop it turning brown.
  3. Stir through the prepared spring onion, garlic, chilli and coriander to taste.
  4. Season the guacamole with plenty of salt and pepper and add more lime juice to taste if required. Garnish with extra coriander leaves and serve at room temperature. If not serving immediately, cover the surface closely with cling film, before you add the coriander leaves, then refrigerate until needed.
