Ingredients

Quantity Ingredient
30g ginger, thinly sliced lengthways
100ml filtered water
100ml agave nectar
zest of 1 lime

Method

  1. 1. Prepare your embers, which should be slow burning.
  2. 2. Place the sliced ginger on a grill cooling rack approximately 10 cm (4 in) above the embers and grill gently until light golden and slightly smoky.
  3. 3. Remove the ginger and place it in a small saucepan with the water, agave nectar and lime zest. Bring to the boil and simmer for 5 minutes. Allow to cool and infuse for 1 hour.
  4. 4. Transfer to a food processor and blend for 30 seconds before passing through a fine-mesh sieve into a sterilised jar. Refrigerate until needed.

NOTE

  • The ginger syrup can be kept in the refrigerator for up to 8 months.
