While it may seem a little odd, water can be smoked for use in cooking. It can give greater depth to a vegetable stock, lighten chocolate and even serve as a base in drinks. Ice gives the water a greater surface area for the smoke to act upon while making sure the water doesn’t evaporate during the smoking process.

Ingredients

Quantity Ingredient
500ml filtered water
500g ice made from filtered water

Method

  1. 1. Light a fire in a cool wood-fired oven using a small piece of fruit wood. Leave to burn down for 30 minutes to a small bed of glowing embers.
  2. 2. Pour the water into a shallow dish and place in the oven. Place a small piece of fruit wood on the embers. Quickly close the door. A thin blue smoke should emanate from the oven. Allow the smoke to infuse the water for 4 minutes.
  3. 3. Remove the door and add the ice to the water in the dish. Repeat the smoking for a further 4 minutes.
  4. 4. Pass through a fine-mesh sieve and chill immediately.
