There’s nothing more refreshing than a cup of tea, and this is a great cooler to whip up on a hot day. The floral notes in French Earl Grey, which include hibiscus flowers, sunflowers and rose petals, pair well with grilled stone fruit such as peaches, particularly as peach is a member of the rose family.

Ingredients

Quantity Ingredient
1 litre filtered water
5g french earl grey tea leaves
600ml agave nectar
3 lemon thyme sprigs
1kg ice cubes
2 yellow peaches, halved and stones removed
120ml fresh lemon juice

Method

  1. 1. Prepare your embers and arrange a grill cooling rack approximately 15 cm (6 in) above the embers.
  2. 2. In a medium saucepan, bring the water to a boil, then remove from the heat. Add the tea leaves and steep for 2 minutes. Strain the tea into a large jug.
  3. 3. Add the agave nectar and the lemon thyme sprigs, stirring to combine.
  4. 4. Add half the ice and allow to cool.
  5. 5. Grill the peach halves, cut side down, until caramelised and slightly charred. Remove from the grill and slice each half into 4 pieces. Add the peach slices to the tea.
  6. 6. Stir in the lemon juice and the remaining ice. Serve immediately.
