Poblano caipirinha is a reinterpretation of a caipirinha blending the distinct flavour of cachaça with smoky and grassy grilled poblano chillies. Sweet spice from the cumin rounds out this unique and refreshing cocktail.

Ingredients

For the cocktail

60ml poblano cachaça
30ml grilled lime juice (see below)
10ml cumin syrup
ice cubes
thin sliver poblano chilli, to garnish

For the grilled lime juice

1 lime, halved

For the poblano cachaça (makes 700 ml/23½ floz)

3 poblano chillies
700ml cachaça

For the cumin syrup (makes 300 ml/10 floz)

200g soft brown sugar
200ml filtered water
1 teaspoon cumin seeds

Method

  1. 1. Prepare your embers and place a grill cooling rack 15 cm (6 in) above the embers.
  2. 2. Grill the lime halves, cut sides down, with the poblano chillies until caramelised and lightly charred.
  3. 3. Cut the poblanos into 3 pieces and steep in the cachaça for 2 hours.
  4. 4. Prepare the cumin syrup. In a small saucepan, bring the sugar, water and cumin seeds to the boil over a medium heat. Simmer for 10 minutes, remove and allow to cool completely.
  5. 5. In a cocktail shaker, add the cachaça, grilled lime juice, cumin syrup and ice, and shake hard.
  6. 6. Strain into a frozen cocktail glass and garnish with the poblano.
