Otoro tuna, fennel, edamame

Otoro is the most prized part of tuna, as it comes from the lowest section of the belly (otoro) where there is the highest concentration of fat. The natural fats that run through otoro are rich with omega-3 oils, making it well suited for grilling. Ideally it should be served warm and rare so that it melts in your mouth. In this dish, otoro’s soft richness is contrasted by the slightly sweet crunch of aromatic fennel. The fresh zing of grilled finger limes complete the dish.

Ingredients

Quantity Ingredient
1 fennel bulb
200g edamame
sea salt
600g tuna belly
4 finger limes
50ml fruity, mild extra-virgin olive oil, such as arbequina or koroneika
zest and juice of 1/2 lime

Method

  1. 1. Prepare your embers.
  2. 2. Trim and peel the tough fibres from the fennel, then slice it thinly using a mandoline. Reserve the fine fronds.
  3. 3. Grill the edamame for 2–3 minutes until lightly charred. Remove and allow to cool enough to handle, then pod the beans.
  4. 4. Lightly season the tuna belly and grill in the enclosed grill rack for 3 minutes on each side. Transfer to a clean tray.
  5. 5. Grill the finger limes for 1 minute, just to release their essential oils. Split the finger limes lengthways and gently squeeze them between your finger and thumb to remove the vesicles.
  6. 6. In a bowl, dress the fennel slices with the olive oil, the lime zest and juice and the fennel fronds. Season to taste. Toss through the edamame.
  7. 7. Slice the tuna belly across the grain using a sharp knife. Divide the fennel salad and sliced tuna belly between serving plates. Scatter with the finger lime vesicles and serve immediately.
