There’s nothing like homemade aioli and it’s much easier to make than you may think. Just don't walk away while the food processor is running as the mixture may split.

Ingredients

Quantity Ingredient
2 unpeeled garlic cloves
1 teaspoon salt
2 egg yolks
2 teaspoons dijon mustard
250ml canola or sunflower oil
1 tablespoon lemon juice

Method

  1. Preheat the oven to 200°C.
  2. Place the garlic on a baking tray and roast for about 10 minutes or until soft. Peel and set aside to cool.
  3. Process the garlic, salt, egg yolks and mustard in a food processor until well combined. With the motor running, slowly trickle in the oil. The mixture should emulsify into a thick sauce.
  4. Transfer to a bowl and stir in the lemon juice.
  5. This aioli will keep in an airtight container in the fridge for up to 10 days.
