Also called Lebanese allspice, baharat is the essence of Lebanese cooking. There are numerous variations – some add chilli, others may vary the quantities – but we're pretty happy with our recipe.

Ingredients

Quantity Ingredient
1 tablespoon black peppercorns
1 teaspoon coriander seeds
1 teaspoon cloves
1 teaspoon cumin seeds
1 teaspoon ground nutmeg
1 tablespoon ground allspice
1 tablespoon ground cinnamon

Method

  1. Grind the whole spices to a fine powder using a spice grinder. Stir in the ground spices.
  2. Store in an airtight jar or container.
