You will find this staple in many a Lebanese kitchen fridge and I’m sure it will soon become a regular in yours. I use it for salad dressings, marinades and on hand at barbecues, or if you’re like my cousin Lisa, simply spread on a piece of fresh Lebanese flatbread.

Ingredients

Quantity Ingredient
100g garlic, peeled
1 teaspoon salt
750ml canola or sunflower oil
150ml lemon juice

Method

  1. In a food processor, blitz the garlic and salt until combined and smooth. Scrape down the sides.
  2. With the motor running, gradually add the oil in a slow continuous stream. Every so often add a small amount of the lemon juice. This will prevent the mixture from splitting.
  3. This garlic paste will keep in an airtight container in the fridge for up to 1 month.
