Ingredients

8 lemons
100g salt
6 cardamom pods
3 fresh bay leaves
boiling water, for filling

Method

  1. Place the lemons in a large bowl and cover with cold water. Leave to soak in a cool place overnight.
  2. The next day, drain and cover again with fresh cold water. Leave to soak again overnight.
  3. On the third day, drain off the water and, using a small sharp knife, make five slits in each lemon, cutting about halfway into the flesh.
  4. Fill each incision with 1½ teaspoons salt, then pack the lemons into a large sterilised jar. Add the cardamom pods and bay leaves to the jar and then fill with boiling water. Cover tightly with the lid.
  5. Store in a cool, dark place for 30 days before using. These preserved lemons will keep in an airtight container in the pantry for up to 6 months.
