This simple side dish is a great accompaniment with almost anything. It's also lovely as part of a mezze or antipasto selection.

Ingredients

Quantity Ingredient
250ml olive oil
2 onions, sliced
10 garlic cloves, crushed
1 bunch chicory, roughly chopped
1 bunch cavolo nero, roughly chopped
1 bunch silverbeet, roughly chopped
1 bunch kale, roughly chopped
1 bunch spinach, roughly chopped
2 tablespoons chilli flakes
100ml extra-virgin olive oil
100ml lemon juice

Method

  1. Heat the olive oil in a wide saucepan over medium heat, add the onion and garlic then turn the heat down to low. Cook for 10 minutes or until the onion is translucent and softened. Add all the greens along with 250 ml of water. Stir to combine.
  2. Cover and simmer for 45 minutes, frequently stirring to stop the greens from burning. Add the chilli flakes and season to taste.
  3. Remove from the heat and set aside to cool.
  4. To serve, drizzle with the extra-virgin olive oil and lemon juice.
