Ingredients

Quantity Ingredient
300g sugar
500ml white vinegar
1 teaspoon ground cinnamon
3 star anise
1 tablespoon mustard seeds
2 fresh bay leaves
1kg onions, roughly chopped
1kg tomatoes, chopped

Method

  1. In a large saucepan over medium heat, combine the sugar, vinegar, spices and bay leaves. When the mixture begins to caramelise, add the onion and cook for about 5 minutes, until soft and translucent.
  2. Stir in the tomatoes and cook for about 15 minutes, until thick.
  3. Set aside to cool.
  4. This relish will keep in airtight, sterilised jars in the fridge for up to 6 months.
