This was one of my favourite dishes growing up. I don’t even like wings but I love these. They’re ridiculous. My mum often makes this dish as my daughter loves it. The meat literally falls off the bone and the lemony, garlicky flavour is always guaranteed to make you reach for another.

Ingredients

Quantity Ingredient
18 chicken wings, cut in half at the joint, (you can ask your butcher to do this for you)
1 lemon, finely sliced
1 tablespoon olive oil
150ml see method for ingredients
200ml lemon juice
1 small handful coriander leaves, finely chopped
1 teaspoon nigella seeds

Method

  1. Preheat the oven to 260°C or the highest temperature it will go.
  2. Wash the wings and place in a large bowl. Season with salt and toss with the lemon slices.
  3. Place the wings snugly into a baking tray. Drizzle with the olive oil and place in the oven for about 40 minutes or until browned.
  4. Carefully turn the wings over. Combine the garlic paste and the lemon juice and pour over the wings. Return to the oven and cook for a further 15 minutes.
  5. Transfer the wings to a serving platter and garnish with the coriander and nigella seeds.
  6. Eat straight away. If you’re not going to eat the wings immediately, leave them in the tray and cover with foil to prevent drying out.
