Avocado, cherry tomato & dukkah salad

This was another salad that Paul discovered while he was in California. The original had pine nuts in it but we wanted to give this a bit of a Middle Eastern twist, so swapped them for dukkah. You can also use toasted almonds or walnuts.

Ingredients

Quantity Ingredient
4 avocados, flesh chopped
250g red cherry tomatoes, halved
250g yellow cherry tomatoes, halved
2 handfuls baby spinach leaves
3 tablespoons finely-chopped coriander leaves
2 tablespoons see method for ingredients
lime cheeks, to serve

Lime dressing

Quantity Ingredient
2 tablespoons honey
1 teaspoon dijon mustard
1 garlic clove, crushed
100ml lime juice
100ml olive oil

Method

  1. To make the dressing, combine the honey, mustard, garlic and lime juice in a small bowl. Slowly whisk in the olive oil and season to taste.
  2. Combine the avocado, cherry tomatoes, spinach, coriander and dressing in a bowl and toss gently, being careful not to break up the avocado. Spread onto a serving platter and sprinkle the dukkah over the top. Serve with lime cheeks alongside.
