Chicken schnitzel wrap

I’m sure some customers wouldn’t mind if all we sold were chicken schnitzel wraps all day long. People cross town for these and get upset when we sell out (which we always do).

Ingredients

Quantity Ingredient
2 pieces lebanese flatbread
see method for ingredients, for spreading
a few leaves cos lettuce, coarsely chopped
1 tomato, sliced
4 slices cheddar cheese
2 Chicken schnitzel
1 lemon, cut in half
1/2 lebanese cucumber, sliced

Method

  1. Preheat a flat sandwich press (optional).
  2. Spread the aioli evenly over the bread. Top with a row of lettuce and tomato. Season with pepper then crumble the cheese over the top.
  3. Slice the chicken diagonally and place along the cheese. Squeeze with lemon juice and top with cucumber. Season with salt.
  4. Fold the bread over at each end of the row of filling. Bring one side over the top and fold and roll, pressing down slightly to flatten, until you have a nice tight wrap.
  5. If desired, place in a sandwich press for 5 minutes. If you don’t have a sandwich press, warm the chicken first and eat untoasted.
