These were designed for an event we did that required me to come up with something exclusively for the occasion. The cookie sandwich is something they do in Italy. It’s an easy, fun way to eat gelato. The peanut butter and chocolate fudge gelato is sandwiched between two peanut butter cookies that need to have a soft texture to make eating it easier. The event I made these for was a bit of a nightmare, but I was really pleased with the sandwich.

170g unsalted butter
200g caster sugar
3 tablespoons glucose syrup
175g smooth good-quality peanut butter
1 egg
1 egg yolk
1 teaspoon vanilla extract
100g plain flour
50g milk chocolate chips
1/2 teaspoon baking powder, sifted

Method

  1. Line a baking tray with non-stick baking paper.
  2. To make the peanut butter and chocolate cookies, place the butter, sugar and glucose syrup in the bowl of an electric mixer with the paddle attachment added and beat for 5 minutes, or until pale and creamy. Add the peanut butter, egg, egg yolk and vanilla extract and beat until combined, then add the flour, chocolate chips and baking powder and beat to form a dough.
  3. Using a 90 ml ice cream scoop, scoop out a ball of the dough and place it on the prepared baking tray, then flatten it slightly with your hands. Repeat, leaving a gap of at least 2 cm between cookies, until you have 10 cookies on the tray. Cover with plastic wrap and leave to chill and firm in the fridge for at least 2 hours.
  4. Preheat the oven to 180°C.
  5. Once chilled, transfer the tray to the hot oven and bake the cookies for 15–18 minutes or until the outside looks crisp. Remove from the oven and leave to cool on a wire rack.
  6. To serve, place a scoop of the peanut butter and chocolate fudge gelato on the bottom side of one of the cookies, then lay another cookie, bottom-side down, on top and sandwich together. Eat straight away.

TIP

  • You can make up these cookie sandwiches a few hours in advance and store them on a tray in the freezer; just don’t leave them there too long or the cookies will become soggy.
