Citrus fruits are commonly used in granita and grapefruit is one of my favourites because it has that slightly bitter taste that I really like. It’s never too sweet. We use ruby grapefruit in our gelato but you can use any of kind of grapefruit really. Rubys are sweeter and I like the colour as well. This is another good granita for mixing with alcohol to make into a refreshing pre-dinner drink.

Ingredients

Quantity Ingredient
600g freshly squeezed grapefruit juice
200g filtered water
200g caster sugar

Method

  1. Add the grapefruit juice, water and sugar to a bowl and blend with a hand-held blender until the sugar has dissolved.
  2. Pour the mixture into a pre-cooled stainless steel tray and put into the freezer. Every 30 minutes, remove and break up the ice crystals with a fork. Do this until icy and easy to scoop (this should take about 2 hours). Serve.
