Next Grandma says, ‘Now for apricot slice!’ She lets me do the measuring – I’m very precise! There are 'teaspoons' and ‘cups’ and even ‘a pinch’. Once you know what you’re doing, it’s really a cinch!

Ingredients

125g butter
1/3 cup caster sugar
2 eggs
2 tablespoons plain flour
1 1/4 cups ground almonds
pinch salt
400g canned apricot halves, drained
1 tablespoon apricot jam

Method

  1. Preheat the oven to 180ºC. Grease a 22 cm square cake tin with melted butter and line with baking paper.
  2. Using an electric mixer, cream the butter, then beat in the sugar until light and fluffy. Beat in the eggs one at a time. Sift in the flour, add the almond meal and salt and mix until well combined. Spoon into the tin and spread evenly. Place 16 apricot halves on top, cut side up, in a 4 by 4 pattern. Press them lightly into the batter with your fingertips. Bake for 18 minutes, or until a skewer inserted into the centre comes out clean.
  3. While the slice is still hot, heat the jam in a microwave until it is warm and runny, then brush over. Allow the slice to cool in the pan. Cut into 8 pieces (2 apricot halves per piece) and serve.
