Sometimes Grandma and I host an afternoon tea. She has special teacups she saves just for me. For the whole afternoon we stir and we bake, but it’s definitely worth it for Grandma’s cupcakes!

Ingredients

Quantity Ingredient
125g butter
3/4 cup caster sugar
1 teaspoon vanilla extract
2 eggs
2 cups self-raising flour
3/4 cup milk

Passionfruit icing

Quantity Ingredient
1 cup icing sugar
1 1/2 tablespoons passionfruit pulp

Method

  1. Preheat the oven to 190ºC. Line 12 x 1/3 cup muffin tins with cupcake cases.[
  2. Using an electric mixer, cream the butter, sugar and vanilla until light and fluffy. Add the eggs one at a time and beat after each addition. Sift the flour and lightly fold half through the mixture, followed by half of the milk. Repeat with the remaining flour and milk. Spoon into the cupcake cases and bake for 15–20 minutes, or until a skewer inserted into the centres comes out clean. Set aside in the tin for 5 minutes, then transfer to a wire rack to cool.
  3. To make the icing, sift the sugar into a bowl and add the passionfruit. Stir until smooth and shiny, adding a little more passionfruit if needed, then spread over the cupcakes (it’s fine if the cupcakes are still warm – this will help the icing spread). Set aside until the icing sets, then serve.
