Grandma has a big garden with herbs by the bunch. We pick lots of basil to use in our lunch. It goes whizz in the blender and in minutes – hey presto! We’ve made a big bowl of delicious green pesto.

Ingredients

Quantity Ingredient
1 1/2 cups firmly packed basil leaves
2 tablespoons pine nuts or chopped walnuts
1/2 cup grated parmesan cheese
2 cloves garlic, chopped
1/2 cup olive oil
500g penne
30g butter
extra parmesan cheese, to serve

Method

  1. In food processor, blend the basil, nuts, cheese and garlic, scraping down the sides occasionally, until almost smooth. Add the oil in a slow, thin stream and blend until smooth.
  2. Cook the penne according to the instructions on the packet. Drain and return to the pan. Add the pesto and butter and toss over gentle heat for 2 minutes. Serve with extra parmesan cheese on top.
