Seafood and pearl couscous stew

This makes a wonderfully tasty winter alternative to a beef casserole. If you have fresh cherry tomatoes on hand you can use them instead of tinned – just add a little extra water.

Ingredients

Quantity Ingredient
1 tablespoon olive oil
1 small leek, trimmed and diced, white part only
2 carrots, diced
2 garlic cloves, crushed
400g tinned or fresh cherry tomatoes
2 tablespoons lemon juice
150g pearl couscous
400g firm white boneless fish fillets, cut into chunks
12 raw prawns, peeled and deveined, tails intact
1 handful coriander leaves, finely chopped
green beans, steamed, to serve

Method

  1. Heat the oil in a heavy-based saucepan over medium heat. Cook the leek, carrot and garlic for 5 minutes, or until the leek has softened. Add the tomatoes, lemon juice and 500 ml water and bring to the boil.
  2. Add the couscous to the pan, reduce the heat to low, cover, and simmer for 15 minutes, stirring occasionally until the couscous and carrot are just tender.
  3. Add the fish and prawns, cover, and continue to simmer gently for a further 5–6 minutes, or until cooked through. Stir through the coriander.
  4. Divide the seafood and pearl couscous stew among serving bowls and serve with steamed green beans on the side.

Baby’s serve

  • For a younger baby, blend the stew (remove the tails from the prawns) until smooth, adding as much liquid (water or your baby’s milk) as needed to achieve the desired consistency. An older baby may be able to manage as is, although you might like to cut up the prawns and fish.

Toddler’s serve

  • Remove the tails from the prawns, chop the prawns and fish into smaller pieces (if needed) and serve as is.
