These little bites are perfect for a snack or lunch at home, or even at a birthday party (where I promise they’ll be just as popular with the adults as the kids). Best of all, you can make them ahead and just pop them in the oven when needed. When buying cornflakes, look for a quality brand that’s low in sugar and salt and high in fibre.

Ingredients

60g parmesan cheese, roughly chopped
180g cornflakes
400g chicken breast fillets
400g chicken thigh fillets
2 tablespoons flat-leaf parsley leaves
2 tablespoons tomato sauce
2 tablespoons sesame seeds, (optional)
75g plain flour
3 eggs, lightly beaten
olive oil spray
mayonnaise, to serve (optional; see note)
or tomato sauce, to serve (optional)
or a blend of tomato sauce and mayonnaise, to serve (optional; see note)

Method

  1. Place the parmesan and cornflakes in a food processor and process until the mixture resembles fine breadcrumbs. Set aside.
  2. Place the chicken, parsley, tomato sauce and sesame seeds (if using) into a food processor and process until minced and smooth. Take heaped tablespoonfuls of the chicken mixture and shape into nuggets.
  3. Place the flour, egg and cornflake crumbs in three separate shallow bowls. Dust the nuggets first with flour, then dip into the egg, and roll to coat in the cornflake crumbs. Refrigerate for at least 1 hour to firm up.
  4. Preheat the oven to 180°C. Line two baking trays with baking paper.
  5. Arrange the chicken nuggets on the trays and lightly spray with oil. Bake in the oven for 20–25 minutes, or until golden and cooked through. Serve with your preferred dipping sauce.

Baby’s serve

  • For a younger baby, wait until your baby is confidently managing finger foods (which may not happen until 8–9 months or older) before offering her these chicken bites. If it helps her, cut them into strips or halves that she can easily hold. For an older baby, cut into strips or halves or serve as is.

Toddler’s serve

  • Serve as is.

Note

  • Do not serve raw-egg mayonnaise to children under 2 years.
