Chocolate cinnamon cookies

These tasty, slightly spicy and traditionally moustache-shaped cookies are made at Christmas, but are enjoyed throughout the year. This version is chewy and much softer than those Vivienne and I have tasted in Puglia, which sometimes were hard – but always scrumptious. Undercook them slightly for a softer bite.

Ingredients

2 eggs, beaten
250g caster sugar
60g unsweetened cocoa powder
175g sour cream
110ml extra-virgin olive oil
2 tablespoons orange, mandarin or lemon zest, finely grated
2 teaspoons natural vanilla extract
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
350g 00 flour
2 tablespoons baking powder
250g dark chocolate, chopped, (at least 70% cocoa solids)

Chocolate icing

Quantity Ingredient
80ml thickened cream
160g dark chocolate chips

Method

  1. Preheat the oven to 160°C.
  2. In a bowl mix the eggs, sugar, cocoa, sour cream, olive oil, zest, vanilla, salt and the spices until well incorporated. Slowly stir in the flour, a cup at a time, until the dough becomes stiff. Add the baking powder and chocolate and mix well.
  3. Roll the dough into 4 cm balls and place on a baking tray lined with baking paper, 3– 4 cm apart. Flatten each cookie slightly and bake in the oven for 8 –10 minutes. Leave on the baking tray for 2 minutes to cool slightly, then transfer the cookies to a wire rack to cool completely. They will be very soft but will firm up as they cool.
  4. To make the icing, heat the cream in a small saucepan over medium heat until just boiling.
  5. Place the chocolate chips in a pitcher, pour the hot cream on top and mix well. Pour the mixture into a small bowl and leave to sit for a few minutes. The mixture should be smooth and shiny.
  6. Ice the completely cool cookies by dipping them into the chocolate icing in the bowl. Once iced, leave the cookies to dry completely before serving or storing. Store in an airtight plastic container for a few days.
