This liqueur comes from the town of Altamura on the plain of La Murgia and is attributed to a 17th-century monk. Each family in the area guards their own version of Padre Peppe and the Striccoli family are famous for the production of this liqueur. In all the recipes it stipulates that the walnuts must be picked by June 24 and soaked for a definite period of time. This delicious liqueur is consumed as a digestive and is said to have medicinal properties. When visiting my sister Isa, a Mother Superior at a convent in the small town of Oria, Vivienne and I shared a Sunday lunch with the sisters. After the meal, one by one, they each brought out their special brew of Padre Peppe for us to try. If you decide to try this recipe, be warned, it takes nine months to make!

Ingredients

Quantity Ingredient
13 whole green walnuts, crushed
1 litre pure alcohol or high-grade vodka
1 teaspoon ground cinnamon
3 cloves
1 whole nutmeg
600g caster sugar
250ml espresso coffee

Method

  1. Place the walnuts in the alcohol in a jar, put the lid on and allow to soak for 5 months in a cool, dark place.
  2. After 5 months, add the cinnamon, cloves and nutmeg to the alcohol and walnuts and leave to soak for another 2 months.
  3. When the walnuts are ready, strain the alcohol and reserve.
  4. Place the walnuts and spices in a saucepan with 600 ml water and bring to the boil over high heat until it boils. Strain the water and discard the solids. Add the sugar and coffee to the water and heat on low until the sugar has dissolved, 5–10 minutes. Remove from the heat and allow to cool.
  5. Add the reserved alcohol and leave again for approximately 2 months to mature in a sealed jar.
  6. When ready, decant into a sterilised bottle and store in a cool, dark place.
