During the very hot and long Pugliese summer, my brother Tommaso and I – both avid tomato and bread lovers – used to make this salad to fill up our stomachs and boost our energy levels required for those long games of soccer with the neighbourhood kids. Two essential ingredients were necessary: ripe, plump tomatoes and good-quality stale bread from Altamura, and we had both. My family comes from Altamura on the plain of La Murgia, and the bread that comes from there is still made in ancient stone ovens that date back to the early 15th century. We have always believed that this bread is one of the best in the world and always made sure that none of it ended up in the rubbish bin when stale. This recipe uses only a very few basic ingredients and is perfect for using up stale bread.

Ingredients

Quantity Ingredient
1/2 loaf good-quality stale bread
extra-virgin olive oil, for drizzling
10 vine-ripened cherry tomatoes
1 red onion, thinly sliced
handful fresh oregano leaves
1 lemon, juiced

Method

  1. Soak the bread briefly in water until the bread tears apart easily, but is not soggy. (This soaking time depends on both the quality and freshness of the bread.) Squeeze the excess water out of the bread and drizzle some extra-virgin olive oil on top.
  2. Put the bread in a large bowl and squeeze each tomato directly on top of the bread to release the juices, and then place the rest of the tomato on the bread. Add the onion, oregano, more extra-virgin olive oil and the lemon juice and gently toss everything together to combine. Season to taste with salt and freshly ground black pepper and serve.
