This dish is simply the best, especially when you have leftover sweet potato, as it’s super-quick, easy and nutritious. Start your day with the right foods to fuel your body, and you’ll soon see a difference.

Ingredients

Quantity Ingredient
140g purple sprouting broccoli
2 teaspoons lucy bee coconut oil
cooked sweet potato, diced
1/2 teaspoon dried chilli flakes, or to taste
1 medium egg
himalayan salt
ground black pepper
handful rocket, to serve

Method

  1. Steam the sprouting broccoli for about 4 minutes, until cooked.
  2. Meanwhile, melt half the coconut oil in a small frying pan over a medium heat. Add the sweet potato and chilli flakes and cook until warmed through. Tip onto a plate.
  3. Melt the remaining coconut oil in the pan, crack the egg into it and fry to your liking, then season. Transfer to the plate along with the steamed broccoli. Add some rocket on the side and serve.
