My lovely niece, Hattie, has adored baking and cooking since she was a tiny dot. One Christmas, when she cannot have been more than about 6 years old, she produced a plate piled high with her homemade chocolate fudge. I am not sure where she came across the recipe but she made it on her own, and made it again and again to the delight of us all! It has become a family tradition at gatherings – thanks Hats!

Ingredients

Quantity Ingredient
25g butter
250g dark chocolate
50g milk
50g full-fat cream cheese
5g vanilla extract
450g icing sugar, sifted
125g toasted nuts, chopped, (optional)

Method

  1. Line a 20 cm square tin with baking paper.
  2. Put the butter, chocolate, milk and cream cheese into a saucepan and melt it together over a low heat. This will be a thick mixture. Stir it all the time.
  3. Once melted, boil for 1 minute and keep stirring. Add the vanilla and icing sugar, stir well and boil again for 1 minute – the mixture should be very thick and sticky. Add the nuts, if using.
  4. Turn the mixture into the prepared tin, spread it out evenly using a wet palette knife and chill for at least 4 hours, or overnight.
  5. Cut into squares. Store in an airtight container.

  • This recipe is vegetarian and dairy-free.

Tip

  • The fudge can be made up to two weeks ahead, so plan it into your pre-Christmas cooking for gifts or if you want to serve it on a special date.
