I like leftovers and view them more as readymade ingredients rather than something to try and use up. Here we use a fabulous-tasting, ready-prepared cake just perfect for truffles. Freeze leftover bits of any flavoured cake and keep them ready to make a batch of these lovely truffles. You can simply roll the truffles in cocoa powder rather than dipping in chocolate if you prefer. Try white chocolate in place of dark or milk chocolate.

Ingredients

Quantity Ingredient
130g dark or milk chocolate
20g clear honey or golden syrup
120g leftover cake
dash liqueur
or a few drops vanilla extract or other flavouring, (optional)

Method

  1. Melt 30 g of the chocolate with the honey in a bowl over a pan of boiling water. Remove from the heat.
  2. Crumb the leftover cake into the bowl, using your fingers or a hand blender, and add to the chocolate.
  3. Add the liqueur or other flavouring, if using, and with wet hands roll the mixture into small bite-sized balls. Freeze for 1 hour to firm.
  4. Meanwhile, melt the remaining chocolate in a clean bowl over the pan of water and, using a fork, lift the frozen truffles down into the chocolate and lift out onto a plate lined with baking paper.
  5. Store in an airtight container in the fridge for up to 2 weeks.
