Ingredients

200g raw pork belly
2 slices fresh ginger

Method

  1. Place the pork belly in a small saucepan and cover with cold water. Add the ginger and a pinch of sea salt. Bring to the boil, skim off the impurities, then reduce the heat and simmer for 15 minutes.
  2. Turn off the heat and leave the pork belly to rest in the broth for a further 10 minutes.
  3. Remove the pork from the broth and allow to cool, then thinly slice and use as required.
