Ouzo-battered zucchini flowers stuffed with goat’s curd

Sharing meze is a wonderful, congenial way of eating. This dish is a more modern idea of battered zucchini flowers with the ouzo batter giving the deep-fried zucchini flowers a real zing.

Ingredients

Quantity Ingredient
12 zucchini flowers
extra-virgin olive oil, for deep-frying
lemon wedges, to serve

Cheese stuffing

Quantity Ingredient
2/3 cup grated kefalotyri or pecorino
200g soft goat’s curd
2 tablespoons finely chopped mint leaves
2 tablespoons finely chopped dill

Ouzo batter

Quantity Ingredient
1/4 cup extra-virgin olive oil
1 tablespoon ouzo, (optional)
1/2 cup water
1/2 cup plain flour
2 egg whites

Method

  1. To make the stuffing, combine the kefalotyri cheese, goat’s curd, mint and dill and season to taste with some freshly ground black pepper.
  2. Carefully open each zucchini flower and insert a teaspoon or two of stuffing, using your finger to push it down toward the base of the flower. Alternatively, put the stuffing in a piping bag with a large plain nozzle and pipe the stuffing into the flowers. Twist the flower a little to hold in the stuffing.
  3. To make the batter, whisk the oil, ouzo (if using) and water into the flour and beat together well. Whisk the egg whites until frothy, then fold into the batter.
  4. Pour plenty of oil into a medium heavy-based saucepan and place over a medium–high heat. Test the heat of the oil with a wooden implement to see if bubbles appear.
  5. Dip the stuffed zucchini flowers one at a time into the batter, turning to coat on all sides, and then carefully place into the hot oil. Cook, turning, each zucchini flower until golden on all sides, about 3 minutes. Cook a few at a time, reheating the oil between each batch. Drain well on paper towels. Serve immediately with lemon wedges.
