Everyone loves a brownie but I wanted the honey to be hero when I cooked a blondie instead at the historic Beekeeper’s Inn near Orange.

Ingredients

Quantity Ingredient
125g butter
100g white chocolate, broken into pieces
115g firmly packed brown sugar
90g honey
1 teaspoon vanilla bean paste
100g self-raising flour
1/2 teaspoon salt
2 eggs, lightly beaten
50g dark chocolate, melted
50g white chocolate, melted

Method

  1. Preheat the oven to 180°C and line the base and sides of a 20 cm x 20 cm baking dish with baking paper.
  2. Melt the butter, white chocolate pieces, brown sugar and honey in a medium saucepan over medium heat, stirring until smooth. Remove from the heat, add the vanilla, flour, salt and eggs and mix with a wooden spoon until combined. Pour into the prepared tin and bake for 30 minutes or until just firm. Cool on a wire rack.
  3. Cut the blondies into bars, place on a serving platter and drizzle with the melted dark chocolate and then the melted white chocolate. Leave to set for a few minutes before serving.

Wine

  • For a change, try an oloroso sherry, which is semi-sweet yet powerful enough for the chocolate.
