Dishes of sashimi laid over seasoned sushi rice, this is opulent special occasion food, and worth a trip to a Japanese shop. As ever, all the fish needs to be sushi-grade.

One for the connoisseur, this contrasts slices of tuna from different parts of the fish, each prized for its unique qualities.

Ingredients

Quantity Ingredient
250g Perfect sushi rice
6 sashimi slices tuna loin
4 sashimi slices medium-fatty tuna
3 sashimi slices fatty tuna
2 shiso leaves

Method

  1. Spoon the rice into an attractive bowl. It should still have a breath of warmth to it.
  2. Lay on the slices of tuna, keeping the same type together and arranging them in lines. Add the shiso leaves, using them to separate each type of tuna.
  3. Serve with soy sauce, pickled ginger and wasabi paste. Eat it with sake or shochu.
