Ingredients

Quantity Ingredient
2kg firm green tomatoes, chopped
125g sultanas
2 tart cooking apples, peeled, cored and chopped
4cm piece of ginger, grated
1 lemon, chopped and seeded
1/2 teaspoon cayenne pepper
370g soft brown sugar
500ml brown vinegar

Method

  1. Combine all the ingredients in a large saucepan and bring to the boil. Reduce to a simmer and cook, stirring occasionally, for 2 hours, or until the chutney has thickened.
  2. Ladle the hot chutney into warm sterilised jars and seal immediately. Store in a cool, dark place for up to 12 months. Refrigerate after opening.
