Ingredients

Quantity Ingredient
460g caster sugar
500ml water
500g cumquats, halved or thickly sliced, seeds removed if desired
2 cloves

Method

  1. Combine the sugar and water in a saucepan and place over low heat, stirring until the sugar dissolves. Bring to the boil, then add the cumquats and cloves and boil for 10 minutes.
  2. Reduce the heat to very low and simmer for 20–25 minutes, until the cumquats are translucent and the syrup is thick.
  3. Ladle the hot cumquats and syrup into warm sterilised jars and seal immediately. Store in a cool, dark place for up to 12 months. Refrigerate after opening.

Cook’s note

  • Candied cumquats are delicious served with cheese – especially blue cheese or baked ricotta – or with panna cotta, yoghurt or porridge.
