Mango and lime sherbet

Ingredients

Quantity Ingredient
2 mangoes, flesh chopped
250ml buttermilk
30g icing sugar
2 tablespoons lime juice

Method

  1. Purée the mango in a food processor. Add the remaining ingredients and blend until combined. Pour the mixture into a wide metal tray and freeze for 3 hours.
  2. Scrape the mixture back into the food processor and blend, then return to the tray and freeze for a further 4 hours, until firm. This sherbet can be stored in the freezer for up to 1 month – if storing, put the mixture into an airtight container after blending.
