Ingredients

Quantity Ingredient
400g peeled, cored and chopped pineapple, (about ½ medium pineapple)
1 litre vodka
115g caster sugar
125ml water

Method

  1. Put the pineapple in a large jar or wide-necked bottle (approximately 1.5 litres in capacity). Cover with the vodka. Seal and store in a cool, dark place for 1 week.
  2. To finish the vodka, combine the sugar and water in a small saucepan and place over low heat, stirring until the sugar dissolves. Leave to cool, then add to the vodka, swirling to combine.
  3. Blend the vodka mixture in batches until smooth (alternatively, use a hand-held blender directly in the jar). Strain through muslin into sterilised bottles. Store in the refrigerator for up to 1 month.
