Potato and tomato salad

This tasty salad makes a lovely light starter. You can easily turn it into a light meal by adding a can of good-quality tuna, well drained of its oil.

Ingredients

Quantity Ingredient
4 medium-sized potatoes, boiled, peeled and sliced
1 small spanish onion, very thinly sliced
8 ripe tomatoes, diced
12 black or green olives, pitted
30g capers in brine, drained and chopped
1 handful fresh basil leaves
1 handful fresh oregano leaves
80ml virgin olive oil
salt and pepper

Method

  1. Toss all the ingredients together gently but thoroughly, and serve with plenty of crusty bread.
