Broad beans with pecorino

This is a dish that is best made in spring, when the broad beans are fresh and young. Eat them as a pre-starter, with a nice glass of light rosé, as you are waiting for your meal to arrive.

Ingredients

Quantity Ingredient
400g very young broad beans
200g pecorino
60ml good-quality virgin olive oil
sea salt flakes

Method

  1. Pop the bread beans out of their pods. If they are very young there is no need to blanch and peel them. Shave the pecorino over the beans and drizzle with olive oil. Sprinkle with salt and serve.
